  1. Take the time to remove the first leaves from the green cabbage. Then carefully remove the other leaves from the cabbage. Using a paring knife, remove the veins from the larger leaves of the green cabbage.
  2. In a pot of boiling water, immerse the cabbage leaves for 5 minutes to blanch them .
  3. Empty the pan and bring a pot of salted water to a boil again . Return the green cabbage leaves to cook for 10 minutes over high heat. Empty the pan into a colander and cool the collard greens in very cold water . Once cooled, cut the leaves into strips .
  4. Cut the Vosges smoked bacon into large pieces of bacon, without the rind. Take care to remove the small bones with the tip of your paring knife. In a frying pan or casserole dish, brown the bacon over medium heat, then once they are lightly browned, reduce the heat to low.
  5. Add the strips of green cabbage leaves. Mix. Add the butter. Cook for ten minutes, stirring regularly .
  6. Taste and adjust the seasoning with salt and freshly ground pepper . The bacon already provides its salt, we recommend that you carefully check the need to add it.
