Description The wild garlic cancoillotte from Lehmann is a delicacy that can be enjoyed with a very light heart, because it is precisely the lightest of all cheeses with a low fat content. Gourmet and healthy! The recipe for making this specialty from Franche-Comté, which is also found in the Vosges, is simple: the milk is curdled, then the curd obtained is drained until it forms a block, the “metton”. This block is then crumbled and then fermented. Once ready, it is melted over low heat, with salted water and butter, until it forms this yellow and creamy specialty that is flavored or eaten plain.
