Description Pure beef gendarmes are a Vosges specialty, prepared by the Daval butchery and charcuterie in Val-d'Ajol. Dry, smoked sausage, made from 100% local beef, its characteristic almost aniseed taste comes from caraway. The origin of the name dates from the 19th century when the gendarmes moved around the countryside, always in pairs. This is the reason why, even today, these sausages are sold in pairs. Crunchy and soft at the same time, it can be eaten raw, as a snack or lightly grilled on the barbecue or heated in simmering water for a few minutes. We recommend it raw, as a treat. Conservation Vacuum packed. This product can be stored in a cool (10-15°C) and dry environment – the gendarmes will then dry quickly – or in the refrigerator (between +2° and +4°C) – the gendarmes will then remain soft.
