Description

Discover our exceptional, melting and fine ham, a true gastronomic masterpiece. Coming from farm pigs from Haute-Saône, raised without antibiotics or GMOs, these animals are fed exclusively with cereals from the farm and flax seeds by Xavier Ménigoz in Saint-Bresson.

This farmhouse pork ham is carefully rubbed with dry salt, flavored with Arbois wine and spices, then lightly smoked with fir wood in the historic smokehouses of Luxeuil-les-Bains. This raw ham from Luxeuil is much more than just a product: it is a story of men and artisanal know-how.

History and Know-How

This gastronomic monument was saved by the butcher and pork butcher Arnaud Daval, thanks to the transmission of the recipe by the pork butcher Lucien Destaing. Based in Luxeuil-les-Bains, the latter was about to retire without a successor. Arnaud Daval decided to preserve this historic know-how, thus offering a second life to this unique recipe.
