Description The beef shank is an underrated piece. And yet it is a dream meat with its central bone and its tenderness when cooked slowly. The shank is prepared by butcher Arnaud Daval with cattle from Pascal Babel's farm in Girmont-Val-d'Ajol in the Vosges.
