Description In the pig trotter family, these, stuffed with chanterelles, hold the top spot. The hand-boned pig's trotter by butcher and charcutier Arnaud Daval in Val-d'Ajol is stuffed with these rustic and rustic mushrooms, with a pleasantly fruity scent. Delicious chanterelle which also has many virtues. With a low caloric intake, chanterelle is nevertheless very high in protein and contains many essential minerals including selenium, which is often lacking. Arnaud Daval chooses a French chanterelle and for the pork works exclusively with the breeder Xavier Ménigoz based in Saint-Bresson in Haute-Saône a few kilometers from Val-d'Ajol in the Vosges. Here the Haute-Saône pigs are raised on straw without GMOs or antibiotics and benefit from a diet made from farm cereals and flax seeds, rich in omega 3. These pigs' trotters stuffed with chanterelles are a delight. Bake at 200°C for 20 minutes in the oven.
