Description Rolled free-range pork roast cut in tenderloin is an ode to simplicity. Prepared by butcher Arnaud Daval with Xavier Ménigoz's Haute-Saône pigs, this meat is easy to cook. You need 30 minutes at 180°C per 500g of meat. Don't forget to first sear your meat in a pan with a little fat to brown its sides and make it crispy. During cooking, baste the meat regularly and let it rest at the end of cooking. The pigs selected by Cella at Xavier Ménigoz are free-range, antibiotic-free and GMO-free.
