Sous-vide is fantastic
1. Sous-vide, healthy preservation
The degradation of food products is caused by micro-organisms, most of which thrive on oxygen. Sous-vide is the safest way to preserve food. Vacuuming also reduces the risk of cross-contamination of foods.
2. A preserved taste
All chefs will tell you that sous-vide perfectly preserves the color, texture and taste of food. The aromas are preserved: there is therefore no organoleptic loss. Better still, all the vitamins are preserved!
3. And much more durable
Vacuum-packed food can by definition be kept longer. Once opened, it must of course be consumed quickly. But in the meantime, you have a laboratory-tested use-by date written on your products. More sustainable !
The questions you ask yourself:
Can we freeze vacuum-packed products?
Yes of course. You can freeze fresh products vacuum-packed at home. We advise you to note the freezer date on the packaging. Do not store them for more than 6 to 8 months in your freezer. And above all, no refreezing.
What information do I find on the packaging?
All mandatory legal notices are on vacuum-packed products: the weight, the nature of the product, its origin, its packaging date and the use-by date (DLC). You will also find a batch number which ensures complete traceability as well as the European health approval number. Soon you will find even more information on the packaging, such as cooking tips. And how to store dry products?
It all depends on the nature of the product. But by definition an unopened dry product can be stored dry, protected from light, if necessary, packaged. Regularly check the minimum durability date of your products (MDD). If in doubt, ask for advice!
