Cold meats without nitrite salt
With the craftsmen, we have been removing nitrite salt , or sodium nitrite, known as a preservative, for over a year. What is it replaced by? Vegetables ! The hams are cooked in a plant-based broth with chard, carrots and acerola, a variety of cherry. Thanks to these substrates and an adjustment of the recipes, the products keep their original taste and color. Cooked hams are without nitrite salt and this is the case for all cooked cold meats and dried cold meats. For transparency , everything is listed in the description of the ingredients.
Work during 2021
If 80% of cold meats are now without nitrite salt , some products still require a little work. This is the case for cold cuts and smoked meats on which the butchers are still working with us to find the right replacement formula. On site, work has already been undertaken to expand the premises and implement these new techniques after the training of craftsmen in the techniques and equipment, during 2021.
