Louis d'Or is a hot canned cheese, a cheese specialty invented by Bernard Louis. There is no season to taste this delicious melting and crispy cheese, but the end of winter is ideal for this comfort. A refiner of exceptional munsters in Dommartin-lès-Remiremont in the Vosges, Bernard Louis offers us a rediscovery of munsters, with conviviality to boot.

The Louis d'Or, cousin of the Mont d'or

On the occasion of the first confinement Bernard Louis, a mischievous scholar, imagined this hot cheese in the style of a Mont d'Or. Not plagiarism, a tribute and a delight! And yes, you smell it and you taste it, Munster is sweet, both in scent and taste. It is also lighter than its cousin from Franche-Comté. It was in the summer of 2020 that the meeting with Bernard Louis took place when the marketing of his marvel was announced. Since then, the Louis d'Or has traveled with Cella: from the United Kingdom to Spain via Paris and to Central Europe.

Bernard Louis is a refiner in Dommartin-lès-Remiremont in the Vosges. He has been supplying Cella since the summer of 2020 with his cheese called Louis d'Or, in homage to the Mont d'Or.

Louis d’Or, a 100% artisanal and local cheese

The box here is made of fir, handcrafted, made in Franche-Comté by a wild boar craftsman with local wood. Artisan wild boar is the name given to those who work the wooden straps that make it possible to create these boxes. It is in this that the Munster cheese will be placed after a special refining. Here, the strip of spruce that surrounds the Mont d'Or disappears and it is the wood of the fir tree in the box which adds flavor to this delicious cheese. The cheeses are made by small breeders - including his own brother - in the Remiremont area, before being matured in the new premises of Maison Louis.

The recipe for Louis d’Or is that of happiness

Placed in the oven at 200°C for 20 minutes, it is deliciously available to you: simply break the crispy surface with a spoon or a simple piece of chopstick, immerse the cutlery or the bread and let the thing settle. bathe in melting cheese. In terms of quantities, a 500g cheese is suitable for two people as a main course, four for an aperitif starter.
