Cella - Recette du jambon beurre du commissaire Maigret

Maigret butter ham

It’s difficult to have a Burgundy delivered to 36, quai des orfèvres. In the middle of the interrogation, when the suspect plays on Jules Maigret's patience, the commissioner has gotten into the habit of not adding a bad craving to his annoyance. While waiting to meet Louise in the evening, it is with the Parisian ham and butter sandwich accompanied by a cold beer that the most famous Belgian character takes comfort. Whether it is brought to him upstairs, eaten in a bar in a bistro on Place Dauphine, or in a sub-prefecture café, ham and butter is the favorite snack of Georges Simenon's hero. When it comes to cooking or investigation, you shouldn't trust the obvious. Are you really sure you know how to make a “ham and butter sandwich” worthy of Maigret? We give you some clues and our homemade recipe.

It's all in the choice of products

As you can imagine, it’s all in the choice of products. The simpler it is, the more impeccable the product must be. As for bread, choose an old-fashioned baguette , with a well-shaped crumb whose color should tend towards blond.

As for the ham, we obviously recommend our white ham worked without nitrite salt , prepared from Haute-Saône pigs raised by Xavier Ménigoz , in Saint-Bresson, without antibiotics, partly fed with flaxseed. to provide good fat for his pigs.

A butter of character

The butter must be at temperature to be worked as easily as possible. We recommend churned butter from Lehmann . With its nutty taste and character, it is one of the best butters in France. Why deprive yourself of it?

As for pickles, choose a French pickle whenever possible. There are some great ones. And if you want, you can even make them yourself in the summer.

Ingredients

For 2 people

Preparation

  1. Cut the baguette in half widthwise then cut each part in half lengthwise. Open the bread well.
  2. Use soft butter, left at room temperature and spread about 30 g per sandwich , on both sides inside. Be generous.
  3. Take 2 nice slices of ham , roll them up and garnish the first sandwich with them. Repeat the operation for the second, without letting your guard down.
  4. With a paring knife, cut the gherkins in half lengthwise and distribute them on top of the ham.

If you are very greedy, no one will condemn you for adding thin slices of 18 month Comté cheese . On the other hand, no innovation with the commissioner. We don't change our habits. Don't forget his beer! We recommend the Val’heureuse blonde beer . It is perfectly refreshing for a lunch on the go.
